Our Story
Our story stretches across pre and post pandemic New York City. We met in the Spring of 2018, when all of our friends still lived in the city, and Manhattan seemed at its peak vibrancy. Minto had selected the infamous Irish pub, Ulysses, on Stone Street for our first meet up. A pub? Hmmm ‘interesting’ Erin thought. However, she wasn’t mad about the proximity of a 5-minute walk from her apartment at the time! You know how dating or meeting new people can be awkward or feel like work in that first meeting? This was not like that at all... it was FUN! Although Erin didn’t know it at the time, Minto’s easy-going demeanor was to be the (much needed) perfect complement to her self-proclaimed ‘uptight perfectionist’ type nature.
Erin moved back to California a few months later due to work. She returned to NYC in December of 2019, just a few months before the Covid shut down which turned the world on its head. Having casually kept in touch, Minto would check in on a weekly basis to see how she was coping during isolation and being away from family during that time. Everyone has their own version of trauma/interpretation from Covid, but being in NYC was truly a unique, grounding and profound experience for them both. Their coping mechanism consisted of at times simply walking the deserted streets together sipping on to-go spicy margaritas and chatting for hours on end whilst truly getting to know and appreciate a deeper understanding of each other.
In January 2021, Minto contracted Covid and was sick and bedridden for 22 days, losing 15-20 lbs whilst confined to his Midtown Manhattan apartment. Erin made the effort to keep in constant contact during that time, and even on his birthday, trekking through wintry snow and freezing ice from Williamsburg Brooklyn carrying bags of food, supplies and a birthday card for him. This gesture meant the world to Minto.
In December 2022, they had a trip to England to visit Minto’s family over the holiday season. Minto planned a quick trip to Paris from London and whilst there, he staged a surprise proposal… Erin said YES!
Now, they are very excited to be getting married in front of their family and closest friends in Carmel-By-The Sea, California.
